How to Make an Easy Vegetable Soup

I made a delicious vegetable soup because of how COLD it was so I thought maybe sharing a video of a veggie soup being made might inspire you to make your own soup. Use some creativity (and whatever you have at the house.) I used bok choy, shitake mushrooms, yukon potatoes, carrots and celery. Instead of rice, I used tempeh. And I use garlic and onion with everything…..:)

    Here is another version of a vegetable soup that includes Barley.

    I got this recipe from http://www.veganfamily.co.uk. It is so good and so easy to make. There is such a debate about organic produce over conventional. If you use all organic produce in this recipe, there will no longer be a debate. 🙂

    *I also used spinach instead of swiss chard. It was just my mood. I am headed to the store and if the chard jumps out at me, I will use it instead. 🙂

    Ingredients:

    5 or 6 large potatoes, peeled and cubed

    2 leeks cut into round slices

    3 carrots, roughly chopped

    5 celery sticks, cut onto chunks

    1 cup of dried pearl barley

    2 heads of swiss chard (or similar green leaf such as leaf beet or a couple of handfuls of spinach), chopped

    enough water to cover

    Salt and pepper to taste

    Directions:

    Very simple to prepare this one! Place all your vegetables except the chard in a large pan with the barley. Cover well with water, boil and simmer until everything is cooked. Add the chard and salt and cook for another 5 minutes.
